Chicken riggies..its a utica thing

One of my most requested dinners in my household is chicken riggies. Back in my 20s i didn't realize it was a local dish and assumed everyone knew about chicken riggies.


Everyone has their own spin on how to make them. Some with red sauce. Some with pink. All delicious!


Today I am going to share with you my version of chicken riggies


What you will need:


* 2 lbs of riggie pasta

* 2 packages of thinly sliced chicken

* 2 large chicken broth

* 3 cans of tomato sauce

* 2 and a pint of heavy cream

* 2-3 cherry peppers

* 1 jar of roasted red peppers

* 3-4 cloves of garlic

* 1 onion

* 2 sticks of butter

* 3 grated Parmesan cheese

* salt, pepper, garlic powder and onions powder - to taste


Chop and cook chicken in frying pants and season to preferred tasted


In big pot, melt two sticks of butter. Add garlic and onions. Simmer on low u until onions are soft. Add cherry peppers and roasted red peppers and simmer for about 10 minutes.


Add cooked chicken to sauteed mix. Add chicken broth, sauce and heavy cream. Cook on medium heat for 15 minutes and then slowly add the Parmesan cheese.


Add salt pepper onion powder and garlic powder to preferred taste.


Boil riggies aldente and add to sauce. You can also add black olives and mushrooms to the sauce as well.
